However,
I would like the abilty to be able to change the colour of some lines in the song
to indicate different parts.

I did a responsive reading in an SSPSS that had womens and mens parts. I was a little more blatant. The men's part was in blue and the women's part was in pink.
We use white most of the time. If the backgrounds are light, I either darken them using the effects option or I add more shadow.
Some people are a little too sensitive when it comes to distractions. I know that as operators we have to be aware of what we do and take care not to draw attention away from the message and to our work but let's face it, some folks would be distracted whether you had multimedia or not. I just trust the Lord to lead me in the design of a service. Our church is a small country Baptist church full of traditional worshippers. I am given artistic freedom and in four years have never had a complaint from my pastor or anyone else about the screen being "distracting". If anything I believe it has drawn more attention to and intensified the message. I do thank God that I am blessed to be surrounded by such support. I feel for you guys that have to walk on pins and needles with the fear that what you do will distract someone from worship.
Typically, we use only one text color since we most often use the same image background for all the songs in one service -- but different each week. We select the color most readable on the background.
One cool thing that I used for font color was found in the program Sunday Plus...you could basically select any place on your background slide and "pickup" that color to apply to the foreground or background (kind of follows the old "pickup and drop color" routine found in many graphic programs. I found that a lot of times a font color from a light or dark portion of the actual background graphic provides a very compatible pallet for offsetting colors and better visibility.
