Is there a way to disable or uninstall the Stock hymns database?
My crew finds it confusing to not be able to edit a song. With our SongSelect subscription, it would be just easier to download any we don't have when we need them.

Un-install - no.
But you can choose not to show it (or any other database) by de-selecting it from the Search Database list.
From the main toolbar select Songs > Search Databases and un-check the ones you don't want to see - in your case Stock Hymns. Some folks do the same with the Christmas Carols if they have all their own imported into the SSP database.
